Friday was International Pizza Day and it's been discovered that a lot of people really do like Pineapple on their pizza! Take THAT nay-sayers. :)
But because it was International Pizza Day, my 11 year old son asked if we could make Pizza for tea. We didn't have the ingredients handy and his mum had already organised tea for that night and Saturday. So we made a date for Sunday Pizza Lunch.....and I tell you what.....that was the best decision we made.
I had no idea on how to make a pizza base, so I went and asked my wife (being a qualified chef). She comes back with this elaborate receipe including flour, eggs, that living organism that I can't think of its name (YEAST!!! That's it) and many more with a resting time for rising and blah blah blah.....
I thought to myself "nah....there's got to be an easier way". So off I go to Google. I found an awesome 2 INGREDIENT pizza base recipe. Just 2 ingredients!
1 cup Natural or Greek Yoghurt and 1 cup Self Raising Flour.
Mix it together and turn it out on to a floured counter or board and kneed it for several minutes. If after a couple of minutes the dough is too wet, add more flour. Too dry add more yoghurt.
I have to admit I did try getting fancy by throwing the dough in the air to make it round and flat, turns out you need to flatten it first.
After throwing that one away, as it hit the ceiling and then fell to the floor, my 11 year old son decided to give it a crack. Perfect!
I tell ya what! After adding the toppings and cooking in the oven....it was delicious! Highly recommend.
